Quanto si possono amare le bruschette e quanto (per me) fanno subito primavera e bella stagione?
le declinazioni sono infinite, versatili come possono esserlo la pizza o la pasta, sono sempre squisite, sfiziose e piacciono a tutti.
La versione di oggi è vegetariana ed assolutamente in linea con l'ingrediente per me principe della primavera: l'asparago.
Se lo trovate buono vale la pena farle con un pane ai semi misti, che una volta tostato è davvero la fine del mondo (a me piace moltissimo il filone tirolese che trovo alla Esselunga, ed è questo delle foto infatti): il resto lo fanno la cremosa robiola, il profumato e fresco limone, il dolce asparago ed il saporito parmigiano.

BRUSCHETTA DI PANE AI SEMI CON ROBIOLA PROFUMATA AL LIMONE, ASPARAGI E PARMIGIANO 


Ingredienti (tutti a piacere) 


asparagi (si possono usare solo le punte oppure tutto l'asparago) 
robiola 
scorza di limone (e poco succo) 
olio extravergine d'oliva 
scaglie di parmigiano 
sale 
pepe bianco 
pane ai semi misti tostato 


Preparazione 


Sbollentare gli asparagi precedentemente puliti e tagliati per qualche minuto. 
Sciogliere una noce di burro in un padellino antiaderente e tuffarci glia sparagi sbollentati, lasciandoli rosolare. regolare di sale e tenere da parte. 
Tostare il pane. 
Condire la robiola con scorza di limone, poco succo se piace, pepe bianco e olio. 
Con un pelapatate prelevare delle scaglie dal parmigiano. 
Montare la bruschetta, spalmando la robiola sul pane ed adagiandoci sopra gli asparagi intervallati dalle scaglie di parmigiano. 
Se piace, terminare con un filo di olio ed un'altra spolverata di pepe bianco.
